Directions for Murchie's Cranberry Pancake Mix
Before you start, soak Cranberries for a few minutes in boiling water, then remove from water to allow excess moisture to run off.
Beat eggs, vegetable oil and milk (or buttermilk) together.
Pour contents of large package into a bowl, and add liquid mixture all at once.
Mix only until blended -- do not over mix -- then fold in Cranberries and orange zest.
Mixture should be lumpy.
Pour large tablespoonfuls onto a hot and lightly oiled griddle. When bubbles appear and underside is golden, turn quickly and cook about 1 ½ minutes longer -- keep warm in oven until ready to serve.
