Milder than most black teas, they can be described as fresh, light, grassy or slightly sweet. Green tea leaves are not fermented like black tea, but steamed prior to rolling, then fired to dry. Most green teas originate from Japan (Sencha, Gyokuro, Hojicha), and China (Gunpowder, Chunmee, Young Hyson). Green tea is now recognized by Health Canada as a source of antioxidants for the maintenance of good health.
