To create the ""precious"" shape of the tea for a Chun Mee tea, leaves are hand plucked and processed immediately to stop the oxidation process by withering and then steaming to maintain a green leaf. Leaves are then fired and hand rolled to create the signature eyebrow shape.
Chun Mee has been a staple of tea drinking in China, dating back to the Ming Dynasty, and is one of the most popular to date.
Green teas are delicate; they are best brewed at a low temperature for a short period of time.
