The Legend
In China, an old temple once held the statue of Guanyin, the Bodhisattva of Compassion. Every day a poor farmer would pass by and reflect on the temple’s poor condition, so he brought a broom and incense from his home, swept clean and lit the incense twice a month. One night, Guanyin appeared to him in a dream and told him of a cave where treasure awaited. In the cave, the farmer found a single tea shoot. From that shoot, he nurtured a large tea bush, from which he produced the tea that he named, Tieguanyin, Iron Bodhisattva of Compassion.
This is one of the oldest known Oolong teas, but also one of the best, highly sought amongst tea connoisseurs, and can be infused multiple times, revealing new flavours with each infusion.
