White teas are not oxidized or de-enzymed (heated by pan-firing or steaming) – they are the least processed of all teas, basically left to dry with as little handling as possible. A white tea may be more oxidized than a green tea because the natural oxidation process is not stopped by heat – that’s why some white teas are a darker brownish colour than some green teas.
