THE BEST No-Churn Cold Brew Ice Cream Recipe

This no-churn cold brew ice cream is just too good not to share...

Here at Murchie's headquarters we host monthly potluck lunches where all the staff share interesting eats - from familiar salads to tasty noodle dishes. Long-time employee Gary Chalk always brings homemade ice cream and we all swarm. While the potluck will remain the main attraction of our packed lunchroom feast, it never feels quite right unless Gary is there with his ice cream. This time Gary made cold brew ice cream that tastes like a frozen Vietnamese coffee, and we just knew that you would love it too!

It's so easy to make and has such simple ingredients, we just can't see a reason for store-bought any longer.

COLD BREW CONCENTRATE RECIPE

INGREDIENTS
1 pound of dark roast coffee: Sumatra or Government Street medium grind.
10 cups of cold water    (Tip: For a small batch use a 1:5 cup ratio)

PREPARATION
Step 1 Put coffee in a nonreactive container, like a stainless steel pot. Add the water slowly and stir gently once to make sure the coffee grinds are completely saturated, agitating the grinds as little as possible.  Cover and steep at room temperature, away from direct sunlight for 12 hrs.

Step 2 Double strain coffee through a fine-mesh sieve. Transfer to a bottle, jar or covered jug. Concentrate will keep in the refrigerator for 12 days. (Tip: Use the concentrate for iced lattes with a cupful of ice, 1/4 cup of concentrate and 3/4 cup to 1 cup of milk)

COLD BREW ICE CREAM RECIPE

INGREDIENTS
2 (300 mL) tins of sweetened condensed milk
200 mL cold brew coffee concentrate
4 (250 mL) cups whipping cream

PREPARATION
Whip the cream to soft peaks
Stir together the condensed milk and the coffee concentrate. Fold half of the whipped cream into the condensed milk/coffee concentrate mixture until well combined and then fold in the remaining whipped cream until completely combined. Pour the ice cream mixture into a chilled bowl and cover bowl with plastic-wrap.
Freeze for 8 hours or over night.
