We’re finding comfort right now in simple dessert recipes. We’re also of the view that a lot of the best-tasting desserts are those based on tea: black teas like Earl Grey and chai for flavouring shortbread cookies, green tea infused ice cream, truffle chocolates brightened with herbal and botanical blends. Tea has a complexity and nuance that can complement and enhance our favourite flavours with minimal effort. 

Some tea-based desserts are made with a gentle extraction process by infusing tea leaves in milk or cream, which gives the dessert a subtle tea note that hums with each bite. 

Some, like our Green Tea Mochi Cake recipe, are made tea flavoured by simply opening a tea bag and sprinkling it directly into the batter. Others could require the use of double-strength tea syrup to amp up deliciousness, or even a mixture of all three flavouring techniques.

The robust acidity and tannin of tea make it great for flavour pairing. And the combinations seem endless.

Earl Grey Chocolate Mug Cake

Ingredients

  • 3 tablespoons milk
  • 1 Murchie’s Earl Grey tea bag
  • 3 tablespoons butter (cut into small pieces)
  • ½ teaspoon vanilla
  • 1 egg
  • 4 tablespoons flour
  • 2 tablespoons cocoa powder
  • 4 tablespoons sugar
  • ¼ teaspoon baking powder 
  • Pinch of salt
  • 3 tablespoons chocolate chips


Instructions 

  1. Pour the milk into a heatproof measuring cup and microwave for 30 seconds. Tear open the teabag and sprinkle into the hot milk. Steep for 2 minutes and then stir in the butter until it melts. (Do not strain out the tea).
  2. Add the vanilla and egg and stir well with a fork. Add all the dry ingredients and stir until the batter is evenly combined.
  3. Distribute the batter evenly between two small mugs or ramekins. Cook one cake at a time in the microwave for one minute each.

The cakes are best served hot, right away.
